These beauties are a treat the whole family will love to indulge in for breakfast. You can breathe easy knowing your loved ones are gobbling up healthy omega fats and antioxidants to start their day off right. It is a win-win over here, folks.
Why brownies for breakfast?
We are brownie lovers and these brownies don’t disappoint. These treats were a way for us to get our healthy oats in the morning without even thinking about oatmeal. In addition, we use Navitas Cacao which also comes with goji and acai in it to add a serious nutritious punch while satisfying your chocolate cravings. Above all, our one year old can’t get enough of these, and we are thrilled about that!
How to make breakfast brownies:
To make this recipe, we never buy store bough oat flour. Instead, just simply blend oats in our vitamix blender. We can’t recommend this blender enough! That is to say, we use it every single day multiple time for recipes and smoothies. After also blending the sweet potato mixture, we stir everything together to make a beautiful batter ready for the oven.
We like ours a little gooey-er, pulling the brownies out of the oven at 25 minutes. However, for those who like it less gooey, cook it for a full 30 minutes. Enjoy with some fresh fruits and plant milk to start your day out on top.

Breakfast Brownies
Equipment
- Vitamix (or high speed blender)
- 8x12 Baking dish
Ingredients
- 1 1/2 cups sweet potato peeled, steamed, and mashed
- 1 cup oat flour Blend rolled oats yourself to make this flour!
- 1/2 cup NutZo (Other nut butters can be substituted as well)
- 3 tbsp maple syrup
- 1/4 cup cacao We love Navitas Organic Cacao with Goji & Acai
- 1 tsp vanilla (optional)
- 1/2 tsp cinnamon (optional)
- 1/8 tsp salt (optional)
- 3/4 cup plant milk we used rice milk but any would be great
- 1/2 cup dark chocolate chips (optional) For more of a desert time dish
Instructions
- Pre-heat oven to 350 degrees F (175 C).
- Peel, dice, and steam sweet potatoes for 10-12 minutes on medium high heat until you can easily poke with fork without sweet potato turning to mush (too mushy is no fun).
- Add rolled oats to Vitamix and blend, starting on low speed and gradually increasing to high speed, until oats become a flour. Place flour in separate medium sized bowl.
- To the flour, mix in the baking powder and cacao powder.
- Place sweet potatoes in blender, along with Nutzo, maple syrup, and cinnamon and vanilla, if using. Blend on a medium speed until completely mixed and no sweet potato clumps remain.
- Combine the sweet potato mixture with the flour mixture, and slowly add in plant milk as you stir to create your brownie batter.
- Lightly grease an 8x12 baking dish with coconut oil, then put batter in dish and place in oven for 25-30 minutes, or until a toothpick comes out cleanly when poked in brownie. Enjoy with fresh berries and plant milk for a great start to your day!
